Michael S. Fenster, MD, Fellow of the American College of Cardiology, known to friends and readers as Chef Dr. Mike, is an interventional cardiologist, professional chef, author, and professor of Culinary Medicine at the University of Montana, whose work bridges clinical science, medicine, gastronomy, and complexity theory. His work advances a complex adaptive systems–based understanding of diet and disease, drawing from complexity science, information theory, microbiology, neuroscience, medicine, traditional nutrition, and behavioral medicine.
